The vineyards ofCastelforte Amarone della Valpolicella DOCG Riserva 2015, from which the prized grapes are obtained are found in three different valleys located inEast of Verona, precisely theMezzane valley, Marcellise and Tregnago/Illasi, very different from each other in terms of exposure, altitude and type of terrain. It is precisely from this diversity that different varietal profiles are born, capable of making the wine rich, complex and at the same time harmonious.
The selection of the vineyards, with an average age of around 30 years, cultivated mostly with pergola but also with guyot, is followed by agronomists with particular attention in all seasons, to bring the bunches to harvest healthy and rich. Harvested by hand with extreme care, the bunches rest in the "fruit rooms" (large rooms with controlled temperatures and humidity) for about two months, before being pressed for perfect drying and undergoing a long and slow fermentation in stainless steel tanks, with continuous and delicate pumping over of the skins to extract only the noblest components.
The refinement takes place in large wooden barrels of French and Eastern European origin, preferable to barriques as they enhance the fruit more than the tannin. Once the two years of aging required by the production specifications have passed, the wine is at its maximum expression and it is here that the winemaker has the opportunity to express himself by expertly mixing different varieties and origins in order to obtain the maximum expressiveness of the wine itself. It will then spend another two years of maturation in wooden barrels before it is bottled.
