- Cupcake LinersSilicone muffin liners hold up really well in the air fryer because they are designed and don't fluff up.
Ingredients
- 3/4 cups Flour all-purpose or regular flour
- 2 cups Blueberries They're also fine frozen if you don't have fresh ones
- 1/2 cup Butter
- 1 3/4 cup sugar
- 1/2 spoon Salt
- 1/2 cup Milk
- 1/2 teaspoons Baking soda
- 1 no Yeast for cakes
- 3 teaspoons Vanilla extract
- 3 no eggs
- 1 spoon sugar to decorate

instructions
Whisk together the dry ingredients
- Mix the sugar, baking soda, baking powder, salt and flour in a large bowl.1 3/4 cup Sugar,1/2 tablespoon Salt,1/2 teaspoon Baking soda,1 no. baking powder,3/4 cups Flour
Mix the wet ingredients and melted butter
- Melt the butter and mix with the milk, eggs and vanilla extract.1/2 cup Butter,1/2 cup Milk,3 eggs,3 teaspoons vanilla extract
Prepare the batter
- Gradually mix the dry ingredients into the wet mixture until a smooth batter forms.
Stir in the blueberries
- Once the batter is formed, fold in 1 1/2 cups blueberries.2 cups Blueberries
Fill the cupcake liners
- Scoop batter into jumbo muffin liners and fill 2/3 of the way up.
Garnish with blueberries
- Fold the batter into some melted berries from the remaining berries. Press lightly into batter.
Sprinkle with sugar
- Sprinkle the batter with a pinch of sugar to decorate.1 tablespoon Sugar
Fry the muffins in the air fryer
- Place the muffins in the air fryer basket and cook at 350°F for 8 minutes, then lower the heat to 350°F for 17 minutes. Make sure the muffins are fully cooked by using a pierced toothpick in the center of the muffin. If toothpick has raw batter when removed, continue cooking 1 minute at a time until cooked through.
Cool the muffins
- Let the muffins cool on a wire rack before removing them from the liners.
Notes
- Use a toothpick to check if the muffins are done. If it comes out clean they are ready.
- You can use fresh or frozen blueberries for this recipe.
- Make sure not to overfill the silicone muffin liners.
- If you don't have sugar to decorate, you can use transparent sprinkles or regular granulated sugar.
- Change the flavor by using almond extract instead of vanilla.
- These muffins can be stored in an airtight container for up to 3 days.
- This recipe is great with raspberries, strawberries or blackberries instead of blueberries.
- You can freeze these muffins. Just be sure to let them cool completely before placing them in an airtight container or freezer bag and freezing them for up to 3 months.
