A very original cocktail made byEmanuele Balestra, manager of the bars of the luxury Barrière hotels in Cannes and Barrière hotels in Courchevel: Americano with chamomile.

Ingredients
- Campari
- Red vermouth
- Dried noble Roman chamomile flowers
- Sparkling water
instructions
- Place 10 to 12 chamomile flowers in a 70cl Campari bottle.
- Wait 4 days.
- Pour directly into an old fashioned glass, 4cl of Campari infused with chamomile, 4cl of red vermouth.
- Add 4 cl of cold sparkling water.
- Garnish with lemon zest, perfuming the edge of the glass.
