- 2 no Cucumbers
- 2 spoons olive oil
- 3 spoons red wine vinegar
- 1 teaspoon maple syrup
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt kosher or to taste
- 200 gr feta
- 2 spoons dill fresh chopped
- 2 spoons spring onions chopped
- to taste black pepper freshly ground

Slice the cucumbers
- To start, wash and finely slice the cucumbers and cut them into half-moons.
Mix gently
- Then, in a large bowl, add the cucumbers, feta cheese, red wine vinegar, maple syrup, olive oil, chopped herbs, salt and pepper. Stir gently to combine and coat everything evenly.
Cool to combine
- Now, place the bowl in the refrigerator for 15-30 minutes to let the vegetables absorb the flavors.
Garnish and serve
- Finally, add more crumbled feta cheese on top and serve.
