- 8 no eggs
- 250 gr Pumpkin
- to taste Olive Oil extra virgin

- Thinly slice the pumpkin and onion.
- Simmer the onion and pumpkin with a little water, then add a little oil and brown briefly.
- Break the eggs into a container. Then, add salt, grated parmesan and beat together.
