Ingredients
- 75 gr Parmesan cheese grated
- 55 gr Breadcrumbs
- 2 no eggs
- 20 gr Type 0 flour
- 1 pinch nutmeg and lemon to taste
For the fondue
- 100 ml Cream fresh
- 10 gr Pecorino cheese
instructions
- Pour breadcrumbs and parmesan, eggs, flour and nutmeg and lemon to taste into a bowl.
- Mix the mixture and keep in the fridge for at least an hour.
- In the meantime, prepare the fondue by pouring the fresh cream and pecorino cheese into a saucepan, stirring without ever bringing to the boil.
- In the meantime, prepare a meat broth based on veal, chicken and vegetables.
- After an hour, take a potato masher and pour the passatelli mixture directly into the boiling broth.
- In a pan, add the fondue and truffles to taste.
- As soon as they come to the surface, drain the passatelli directly into the pan where the sauce was added and mix quickly.
