The recipe of Max Mariola, certified by MSC, combines tradition with sustainable products. TherefregolaSardinian with artichokesand lupinswas born precisely from this perspective.

Ingredients
- 500 gr of Sardinian fregola
- 600 gr of clams MSC certified lupine
- 4 no artichokes
- to taste 00 flour
- to taste Frying Oil
- to taste Parsley
- to taste Garlic
instructions
- Clean the artichokes; cut 2 into 8 pieces, and the remaining, which will be fried, cut very thin with a mandolin or a very sharp knife.
- Store them separately in two bowls with water and lemon.
- In the meantime, open the lupine clams with a clove of garlic and parsley stems, adding a glass of running water to obtain more cooking liquid and then cook the fregola.
- Brown the two artichokes cut into 8 pieces with a clove of garlic and extra virgin olive oil.
- Once browned, add a little water and cover with baking paper until cooked.
- Add the fregola to the same pan, season it with the artichokes and gradually add the cooking liquid obtained from the lupins until the fregola is completely cooked.
- Dredge the thinly sliced artichokes in the flour and fry them in a pan with hot peanut oil until golden.
- Add the lupins and chopped parsley to the pan with the fregola, stirring until the liquid becomes creamy.
- Serve on plates, scattering the fried artichokes sprinkled with a little salt on top.
Notes
Clam fishing, or lupins, in Italy has a long history. Initially considered a poor food and hand-caught for family consumption, in the 1950s it began to be harvested for sale. The shallow and sandy seabed of the Adriatic Sea is an ideal habitat for the lupine clam, which can be found up to 7 meters deep. The first MSC certified fishery in the Mediterranean is located in Italy, in Chioggia, and fishes lupine clams!
