Ingredients
For the pasta
- 400 gr Flour
- 2 no eggs
- to taste Salt
For the filling
- 400 gr Fish various types (sole, sea bass, hake, etc.)
- 100 gr Ricotta
- 200 gr Beets cooked
- 50 gr Grain grated
- 2 no eggs
- to taste Salt
- to taste pepper
For the sauce
- 50 gr Pine nuts
- 50 gr Butter
- 1 spoon Olive Oil extra virgin
- 1 dl Cream
- to taste Salt
- to taste pepper
To complete
- 2 leaves Basil
- 2 no tomatoes mature small
instructions
Prepare the fish
- Clean the fish, wash it, immerse it in lightly salted water and cook it (5 or 6 minutes, depending on the quality of the fish).
- Drain it and let it cool.
- Bone it, remove the skin and chop the pulp finely.
- Pour it into a bowl with the ricotta, parmesan cheese, beets, eggs, salt and pepper.
Prepare the pasta
- Place the flour in a mound on a pastry board. Pour the eggs and a pinch of salt into the center.
- Add water to obtain a firm and elastic mixture.
- Roll out a thin sheet of dough with a rolling pin and place small mounds of dough at regular intervals on half of it.
- Cover with the other sheet of pastry and cut ravioli with a pastry cutter.
Prepare the sauce
- Wash the tomatoes, remove the seeds and cut them into thin fillets.
- Blend the pine nuts with the butter and oil to obtain a smooth mixture.
- Pour everything into a large saucepan.
- Add the cream, salt, pepper and heat.
Cook the ravioli
- Cook in plenty of salted water and drain al dente.
- Transfer them to the saucepan with the sauce. Add the basil and chopped tomatoes.
- Cook over a low heat for about 3 minutes.
- Plate and serve.
Notes
Drain the ravioli al dente to prevent them from spoiling.
