- 100 gr sugar
- 60 gr Candied Orange Peel
- 60 gr Candied Citron
- 60 gr Coconut or Candied Pumpkin
- 1 no Lemon
- 1 no Orange
- to taste Devils o Colored sweets
instructions
- Mix the flour, arranged in a fountain on the table, with all the other ingredients.
- Work the dough well, then let it rest covered for half an hour.
- Cut the dough into small portions and, on the floured table, use the palms of your hands to form sticks and cut them into pieces of approximately one centimeter each.
- Fry them a few at a time in hot oil until golden and pass them on absorbent paper.
- Liquefy the honey in a saucepan with the sugar and a few tablespoons of water, bring to the boil at moderate heat.
- When the foam disappears, pour in half of the candied fruit cut into small pieces, the very thin peel of the lemon and orange into strips and the struffoli.
- Mix gently so that the struffoli are evenly coated with honey and absorb it completely. Pour them onto a round plate and with wet hands shape them into a donut with a hole in the centre.
- Scatter colored sprinkles and decorate with the other candied fruit cut into strips.
