Preheat the oven to 200°C and line one or two baking sheets with parchment paper.
In a large bowl, mix the panko breadcrumbs with grated Parmesan, paprika, garlic powder, dried parsley, a pinch of salt and pepper. Mix well to evenly distribute all ingredients and set aside.
Cut the chicken breast into approximately 4 cm cubes. Season the chicken pieces with salt and pepper to taste.
In another large bowl, add the flour and the seasoned chicken pieces. Use a spoon to mix the chicken in the flour until all pieces are evenly coated.
Transfer the floured chicken to a clean bowl, removing excess flour.
Beat the eggs with oil until smooth. Pour the egg mixture over the chicken pieces and mix to coat completely.
Dip each chicken piece into the breadcrumb and Parmesan mixture, ensuring each bite is well coated. Arrange the coated pieces on the prepared baking sheets, leaving a slight space between them.
Bake for about 25 minutes or until the bites are golden and crispy outside and thoroughly cooked inside (internal temperature should reach 75°C).
Serve hot with your favorite dipping sauces.
