Wild Asparagus Frittata

A quick spring recipe is wild asparagus omelette that we can prepare as a side dish or main course. The wild asparagus omelette is excellent when served with some homemade oven-baked bread.

Ingredients

  • qb Asparagus wild
  • 1 nr Leek or onion
  • 4 nr Eggs
  • qb Olive Oil extra virgin
  • qb Salt

Instructions

  • Clean the asparagus by removing the tough part.

  • Clean the leek and cut it into rounds.
  • Cook the asparagus and leek slowly in a non-stick pan with a little oil and water.
  • Beat the eggs and add salt, then add to the vegetables and cover, cooking slowly.

  • Flip the frittata on both sides without letting it stick.
  • Cut into diamonds and serve.

Notes

The ready frittata can be placed in a hot oven at 150 degrees for a few minutes.
