  • 200 gr. Dried chestnuts
  • 3 nr. Apples
  • q.b. Sugar
  • 2 tablespoons Honey
  • 2 tablespoons Maraschino liqueur
  • q.b. Milk
  • q.b. Butter
  • 50 gr. Sultana raisins
  • q.b. Wild fennel
  • 4 nr. Eggs
  • q.b. Salt
  • 1 Packet Vanillin

Instructions

  • Soak the chestnuts overnight.
  • Cover them with milk, add a bit of fennel, a pinch of salt and cook until soft.
  • Cook the apples for 20 minutes with 3 tablespoons of sugar.
  • Pass through the apples and chestnuts and cook for 10 minutes with 60 g of melted butter, honey, maraschino, and vanillin.
  • Remove from heat and incorporate egg yolks, raisins, and egg whites whipped to stiff peaks.
  • Pour into a buttered mold and bake in a water bath at 180°C for 40 minutes.
