  • Chop together the giblets, pancetta, and sausage; add the soaked and squeezed bread crumbs, peeled sliced apples, softened prunes in warm water, chestnuts, and stuff the turkey; add a knob of butter mixed with salt and pepper.
  • Seal the opening, wrap with pancetta slices, and cook in the oven with a little butter at 220°C for one hour, then at 180°C for about another hour and a half.
  • Baste the turkey occasionally with its juices.
  • In the last quarter of an hour, remove the pancetta and allow the skin to brown.
