A very original cocktail created by Emanuele Balestra, head of the bars of the luxurious Barrière hotels in Cannes and Barrière hotel in Courchevel: Chamomile Americano.

Attrezzature
- Strainer (to filter the chamomile if loose)
- Sauce Bowls for infusion
- Sharp Knife for lemon zest
Ingredients
- Campari
- Red Vermouth
- Dried flowers of noble Roman chamomile
- Sparkling water
Instructions
- Place 10 to 12 chamomile flowers into a 70cl bottle of Campari.
- Wait 4 days.
- Pour directly into an old fashioned glass, 4cl of chamomile-infused Campari, 4cl of red vermouth.
- Add 4 cl of cold sparkling water.
- Garnish with a lemon zest, fragranting the rim of the glass.
