Senatore Cappelli Durum Wheat: Properties and Origin

Known as a select variety in the 1930s and 40s, the Senatore Cappelli durum wheat was widely used in the regions of Puglia and Basilicata. Its name is a grateful tribute to the Abruzzese senator Raffaele Cappelli.

Defined chosen race in the 30s and 40s, the Senatore Cappelli durum wheat was widely used in the lands of Puglia and Basilicata. Its name is a grateful dedication in honor of the Abruzzo senator Raffaele Cappelli, promoter in the early twentieth century of the agrarian reform that led to the distinction between durum and soft wheat. The Senatore Cappelli wheat is a durum wheat, awned (equipped with awns, the filaments seen in grasses), obtained by genealogical selection in Foggia, in 1915, by Nazareno Strampelli. For decades it was the most widespread cultivation, until the spread of more productive varieties that ensure higher yield.

Properties of Senatore Cappelli durum wheat

Senatore Cappelli durum wheat is an ancestor of modern durum wheat. Thanks to the Bioland Company that reproduced the seed for years, starting from only 200 g, purchased from the Bari Germplasm (seed bank), it has been rediscovered and re-evaluated as an excellent cereal, thanks to the following characteristics :

  • the plant has a height of about 180 centimeters (higher than common wheat) and contains higher percentages of lipids, amino acids, vitamins and minerals, as well as characteristics of high digestibility;
  • it represents a sweet and exquisite alternative for the preparation of all products currently used based on traditional wheat;
  • it has never undergone the alterations of modern agriculture’s genetic manipulation techniques, which sacrifice flavor and traditional content in favor of high yield;
  • The mycorrhizal pasta of Senatore Cappelli has a high protein, organoleptic and ORAC value;
  • The prized grain of Senatore Cappelli has a high protein value, ideal for making bread at home.

Is Senatore Cappelli durum wheat suitable for gluten intolerance and allergies?

Senatore Cappelli durum wheat is free from any contamination by mutagenesis induced with X-rays and gamma rays from radioactive cobalt, unlike the OGM irradiated durum wheat varieties currently used in agriculture.

The hypothesis seems plausible that the genetic modification of modern wheat varieties is associated with a change in their protein, particularly a fraction called gliadin, which is a basic protein, from which, by peptic-tryptic digestion, a substance called fraction III of Frazer, is obtained, which is responsible for inflammatory enteropathy and thus malabsorption (gluten intolerance and allergies).
