Ingredients

  • 100 gr plain flour
  • 50 gr grated coconut shredded
  • 100 gr caster sugar
  • 2 cucchiaini grated lime zest
  • 125 ml coconut milk
  • 60 ml lime juice fresh
  • 1 nr egg
  • 50 gr melted butter
  • 1 cucchiaino baking powder
  • q.b. whipped cream for garnish
  • lime and coconut zest toasted, for decoration

Instructions

  • In a bowl, combine the flour, shredded coconut, sugar, lime zest, and baking powder. Mix well.
  • In a separate bowl, beat the egg with the coconut milk, lime juice, and melted butter.
  • Pour the liquid ingredients into the bowl of dry ingredients and stir until a smooth batter forms.
  • Distribute the batter into 4 slightly greased 250 ml cups.
  • Cook the puddings one at a time in the microwave at 800 W for about 90-100 seconds, until puffed and cooked through the center.
  • Let rest for a minute, then garnish with whipped cream, lime zest, and toasted coconut.
  • Serve warm.
