Ingredients
- 100 gr plain flour
- 50 gr grated coconut shredded
- 100 gr caster sugar
- 2 cucchiaini grated lime zest
- 125 ml coconut milk
- 60 ml lime juice fresh
- 1 nr egg
- 50 gr melted butter
- 1 cucchiaino baking powder
- q.b. whipped cream for garnish
- lime and coconut zest toasted, for decoration
Instructions
- In a bowl, combine the flour, shredded coconut, sugar, lime zest, and baking powder. Mix well.
- In a separate bowl, beat the egg with the coconut milk, lime juice, and melted butter.
- Pour the liquid ingredients into the bowl of dry ingredients and stir until a smooth batter forms.
- Distribute the batter into 4 slightly greased 250 ml cups.
- Cook the puddings one at a time in the microwave at 800 W for about 90-100 seconds, until puffed and cooked through the center.
- Let rest for a minute, then garnish with whipped cream, lime zest, and toasted coconut.
- Serve warm.
