In February, Nero 9 introduced onerevolutionary noveltyin his menu, we are talking about the"Black selection 9". This unique and innovative meat selection exceeds thetraditional concetto di scelta basata esclusivamente sulla razza.

Sustainable and non -intensive farms

Nero 9 sottolinea l’importanza di lavorare con carni provenienti da non -intensive farms, ma sostenibili e “artigianali”. Questo approccio consente di abbracciare una ricca varietà per genetica e per tipo di allevamento, che danno vita a una diversità di caratteristiche organolettiche come il colore, l’odore, l’aspetto, il sapore e la consistenza.

The bridge and the consistency of the fat

La “Selezione Nero 9” non fa più riferimento alla razza ma alla tidy and consistency of fat. Si tratta di una quantità ottimale di grasso dal colore ambrato, distribuito in maniera uniforme e fine, che rende la carne succulenta e morbida.

Dry pastry

La carne selezionata subisce un processo di frollatura a secco (Dryaged) that Nero 9 guarantees for a period ranging from 30 to 40 days. This process, made with the help of special cells, causes surface drying in a controlled humidity environment. The result is a meat that acquires softness, flavors and new perfumes.
