Air fryers are not really fryers at all. They are small convection ovens. Essentially, a convection oven is equipped with a fan that blows hot air for more efficient and even cooking.
An air fryer can heat up much faster (often eliminating the need for a preheating phase) and is able to blast heat at a higher speed combined with a perforated basket for air circulation across the entire surface. This results in faster cooking times, quicker browning, and greater crispiness all over.
Air-fried food will never be as deeply crispy as something from a deep fryer, but rather well browned as a convection oven can probably achieve it (i.e., if you get a “good air fryer‘).
In short, air fryers roast better, more evenly, and faster than most ovens. Even an air fryer toaster oven isn’t as compact as a basket-style air fryer, so the oven will have to preheat longer and often won’t brown or crisp as deeply.
What are the downsides of an air fryer?
Like any small countertop electric appliance, air fryers take up space (in the kitchen and/or pantry). Even air fryers aren’t as big as you might think. Even the larger models best serve four people at most, while the smaller models are really suitable for two or three people.

Is air frying the same as deep frying?
No, a deep fryer requires a large amount of oil (enough to fully immerse the food). Air frying typically requires, at most, a few tablespoons. With a deep fryer, you use hot oil to cook the food. With an air fryer, you are using essentially a very small and efficient convection oven.
