Ingredients
- 100 gr 00 flour
- 50 gr grated coconut rapé
- 100 gr granulated sugar
- 2 teaspoons grated lime zest
- 125 ml coconut milk
- 60 ml lime juice fresh
- 1 no. egg
- 50 gr melted butter
- 1 teaspoon baking powder
- qb whipped cream to garnish
- lime and coconut zest toasted, to decorate
Instructions
- In a bowl, combine the flour, grated coconut, sugar, lime zest and baking powder. Mix well.
- Separately, beat the egg with the coconut milk, lime juice and melted butter.
- Pour the liquid ingredients into the bowl of dry ingredients and mix until you get a smooth dough.
- Divide the batter into 4 lightly greased 8-ounce cups.
- Cook the puddings one at a time in the microwave at 800 W for about 90-100 seconds, until they are puffed up and cooked in the center.
- Let it rest for a minute, then garnish with whipped cream, lime zest and toasted coconut.
- Serve warm.
