Ingredients
- 100 gr. Tuorli d'uovo
- 150 gr. Albumi d'uovo
- 140 gr. Zucchero
- 60 gr. Farina
- 20 gr. Cacao
- 25 gr. Maizena
- 300 gr. Cioccolato bianco
- 250 gr. Cioccolato fondente
- 50 cl Panna
- 2 Fogli Colla di pesce
- 150 gr. Mascarpone
- q.b. Liquore all'arancia
- 2 nr. Arance (scorza)
Instructions
- Lavorare i tuorli con metà dello zucchero.
- A parte montare a neve ferma gli albumi con lo zucchero rimasto.
- Unire i tuorli agli albumi e amalgamare delicatamente la farina, il cacao e la maizena.
- Versare il composto su una placca da forno ricoperta con carta forno, livellare e cuocere in forno preriscaldato a 180 gradi per 15 minuti.
- Sfornare e sformare subito su un canovaccio spolverizzato con zucchero semolato.
- Rifilare i bordi della pasta in modo da ottenere un rettangolo con i lati dritti e arrotolarlo delicatamente su se stesso.
- Lasciare intiepidire a temperatura ambiente.
- Intanto preparare la farcia: portare a bollore metà della panna, togliere dal fuoco e unirvi il 250 g di cioccolato bianco a pezzetti.
- Lasciar raffreddare aggiungere la scorza di un'arancia.
- Lavorare a crema il mascarpone, aggiungere il liquore e la colla di pesce precedentemente ammollata in acqua fredda, strizzata e sciolta a fiamma bassa.
- Amalgamare al mascarpone la crema preparata in precedenza e stendere il tutto sulla pasta srotolata.
- Riarrotolare di nuovo e far riposare in frigo per almeno due ore.
- Portate a bollore la restante panna, toglierla dal fuoco e unire il cioccolato fondente a pezzetti.
- Mescolare, far raffreddare e aggiungere la scorza dell'altra arancia.
- Riprendere il tronchetto, tagliarne le estremità in due pezzi da due centimetri e posizionarli al centro del tronchetto per formare 2 rami.
- Versare la crema di cioccolato nero e guarnire con scagliette di cioccolato bianco.
