Ingredients
- 500 gr sweet potatoes
- 100 gr chopped almonds
- 150 gr sugar
- 1 nr Lemon grated zest
- qb Ground cinnamon
- 500 gr flour
- 100 gr lard
- 100 ml extra virgin olive oil
- qb Powdered sugar for dusting
- qb Oil for frying
Instructions
- Cook the sweet potatoes, mash them, and mix with chopped almonds, sugar, lemon zest, and cinnamon to obtain a dense dough.
- Create a well with the flour, place the lard and oil in the center, knead until you get a uniform dough and let it rest for about 15 minutes.
- Roll out the dough with a rolling pin and prepare 8 cm diameter discs. Place the filling in the center and fold in half, pressing the edges with the help of a fork to keep them well sealed.
- Fry the fritters in hot oil until golden, then drain and dust with powdered sugar.
This culinary delight is a symbol of the Christmas festivities in the Canary Islands archipelago and represents a culinary tradition passed down through generations.
