These oat flour bites with peaches and cream are a delicious and portable way to enjoy some fresh peach flavor in one satisfying bite. You can make them for breakfast or a snack and they are great warm or cold.

Ingredients
- 2 cups & ½ oat flakes
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ½ teaspoon salt kosher
- 2 pcs eggs large
- ¾ cup milk
- ½ cup cream plus some for garnish
- ½ cup apple sauce
- ¼ cup honey
- 2 teaspoons vanilla extract
- 2/3 pcs peaches diced (you can skip peeling if not treated)
Instructions
- Preheat the oven to 180°C. Spray a muffin tin with non-stick baking spray.
- In a small bowl, whisk together oats, baking powder, cinnamon, and salt.
- In a large bowl, whisk together eggs, milk, cream, apple sauce, and honey. Mix in vanilla extract.
- Mix dry ingredients with wet ingredients until well combined. Add diced peaches.
- Divide the mixture evenly into 12 muffin cups.

- Bake for 25 minutes or until golden and cooked through.
