The cocoa powder or nibs comes from raw cacao beans e unprocessed. The taste is stronger and more bitter than processed cocoa powder (also known as Dutch or alkalized) but it is still a wonderful, rich, and complex flavor.

Why should you care?  Because raw cacao has much more nutritional power than your bar. The antioxidants and flavonoids that make chocolate beneficial for our health remain intact in raw cacao due to skipping the processing that otherwise strips them. Raw cacao, instead of cocoa powder, and raw chocolate have four times more anti-aging and disease-fighting power.

Where to use it: anywhere you would use cocoa powder or processed chocolate. Combine it with a natural sweetener and your preferred milk for a thick, nutritious hot chocolate, add it to smoothies for an energetic, chocolatey flavor, or make an avocado pudding with it (and dates)!
