What is the difference between agave and aloe?
The plant of agave can be confused with that of aloe. Just look at the flower to understand the difference. The agave has a single flower and often dies after blooming, while aloe has more than one. The inside of aloe leaves is gelatinous while that of agave is fibrous.
Agave nectar
The agave nectar is mainly used as a sweetener. The agave syrup is obtained from the sap of the agave plant, native to Mexico and South Africa.
This nectar is often used as a vegan alternative to honey and has a caramel flavor. The strength of the agave nectar flavor depends on the color of the syrup. If it is light, it will have only a subtle caramel taste, while the darker variants have a very distinct caramel flavor and are often used in cooking.
The sugar content in agave nectar is about 50% fructose and 20% glucose, making it one and a half times sweeter than regular sugar. Since it is sweeter than sugar, less is needed to achieve equivalent sweetness.
Agave nectar is often used as a substitute for honey. It can be added to cold drinks like iced tea as a sweetener or sprinkled on cereals or pancakes and used in baking.
Dark agave syrups are often used in marinades and sauces for meat and meat-based products.
