- We arrange the flour in the fountain on the pastry board, make a void in the center and embarked the eggs in the center, a teaspoon of oil and a pinch of salt.
- We work the pasta vigorously and for a long time, until you get a smooth and elastic pasta that we leave to rest for 15 minutes covered with a canvas.
- On the floured pastry board, spread the pasta with a rolling pin in a sheet of the thickness of 2 millimeters, cut it into rectangular pieces, place them on the wires of the appropriate guitar and pass over the rolling pin several times cutting the pasta thus.
- We pinch the ropes with our fingers just as you do with a guitar, to detach the pasta, and we get the macaroni similar to spaghetti with the square section that gradually we have to dry on the floured pastry board or on a canvas.
- We prepare the sauce by browning the garlic, onion and bacon with the oil in a saucepan; We wet with the wine and let it evaporate, then add the olives, peeled tomatoes, parsley or basil, a little water, salt and continue cooking for 1 hour, with the lid, on low heat.
- In a pot capable, we bring plenty of water to the boil, we climb the macaroni al dente; Slander them and season them with the prepared sauce, sprinkle with grated pecorino or parmesan to taste and serve.
Notes
- Replace 100 grams of durum wheat with 100 grams of 00 flour to give pasta more softness.
