  • Salvia qualche foglia
  • 1 mazzetto Basilico
  • q.b. Pepe
  • 2 Tuorli D'uovo
  • 1 Limone (succo)
  • q.b. Farina poca

Instructions

  • Mettete la farina a fontana sulla spianatoia e incorporatevi 150 g di burro morbido a pezzetti, una presina di sale e mezzo bicchiere di acqua tiepida.
  • Impastate accuratamente gli ingredienti, lavorando con decisione, quindi fate una palla di pasta, che metterete a riposare, coperta da un panno umido per 20 minuti.
  • Nel frattempo lavate e asciugate gli champignon, poi tagliateli a fettine sottili.
  • Fate fondere 50 g di burro in un tegame e ponetevi a rosolare i funghi con un trito finissimo di rosmarino, salvia e basilico.
  • Regolate di sale e di pepe.
  • Dopo 5-6 minuti togliete dal fuoco e incorporate i due tuorli e il succo di limone, rimestando con cura.
  • Stendete la pasta sulla spianatoia infarinata e ritagliatevi un disco largo a sufficienza per foderare il fondo e le pareti della tortiera prescelta (meglio se con il bordo sganciabile).
  • Imburrate e infarinate quest'ultima, quindi adagiatevi la pasta, rivoltando all'interno il bordo tutt'intorno per formare un cordoncino, che pizzicherete con le dita.
  • Rovesciate sulla pasta il composto di funghi.
  • Con gli avanzi di pasta formate delle striscioline e disponetele a grata sui funghi.
  • Infornate a 200 gradi per 40 minuti.
  • A cottura ultimata, trasferite la crostata sul piatto da portata e servite subito.
