Why this dish is healthy

Risotto with walnuts and gorgonzola is a dish rich in flavors and nutrients. Sweet gorgonzola provides an excellent source of calcium and protein, while walnuts offer healthy fats and antioxidants. This dish is ideal for those seeking a creamy and hearty meal that can warm even the coldest days. Additionally, rice is a source of complex carbohydrates that provide long-lasting energy, making it perfect for a family or friends’ dinner.

Why we recommend this recipe

For an even creamier risotto, be sure to stir constantly during cooking. A useful trick is to add broth gradually, allowing the rice to absorb the liquids and release its starch. If you want a touch of freshness, try finishing the dish with a drizzle of extra virgin olive oil or a sprinkle of black pepper. The preparation requires patience, but the final result will repay every effort.

Do children like this recipe too?

This risotto can be a great way to introduce children to the flavors of gorgonzola and walnuts. You can adjust the amount of cheese to suit their tastes, making the dish sweeter or more savory. To make it even more appealing, try presenting it in fun shapes or adding some chopped spinach for a touch of color and nutrition. Involve the little ones in preparation by letting them stir and decorate the final dish.

Pairings

Risotto with walnuts and gorgonzola pairs beautifully with a fresh white wine such as Sauvignon Blanc or Pinot Grigio, which balances the dish’s creaminess. For a more rustic pairing, you can serve a light craft beer. If you are looking for a side dish, a simple mixed salad with lemon vinaigrette can add freshness to the meal, while mashed potatoes could make the culinary experience even richer.

Storage tips

If you have leftover risotto, store it in an airtight container in the refrigerator for up to two days. When reheating, add a bit of broth or water to restore creaminess. Avoid freezing risotto as the texture may be compromised. Reheat gently in a pan, stirring to prevent sticking, and enjoy it as if freshly made.
