Ingredients

  • 1000 gr. Lombata Di Manzo
  • 100 gr. Castagne Bianche Secche
  • 1 costa. Sedano
  • 1 nr. Carota
  • 1 nr. Cipolla
  • 1 rametto Rosmarino
  • 1/2 bicchiere Vino Bianco Secco
  • 30 gr. Burro
  • q.b. Panna
  • q.b. Olio D'oliva
  • q.b. Sale
  • q.b. Pepe

Instructions

  • In un tegame scaldate un cucchiaio d'olio con il burro e mettetevi a rosolare la carne legata con alcuni giri di spago bianco da cucina, salate e pepate.
  • Tritate sedano, cipolla, carota e rosmarino e aggiungete il tutto nel tegame, fate colorire, spruzzate con il vino e lasciate evaporare.
  • Coprite e continuate la cottura in forno a 200 gradi per 30 oppure 40 minuti: 30 minuti se la volete al sangue, 40 minuti se la preferite rosata.
  • A parte lessate le castagne secche e poi passatele al setaccio.
  • Togliete l'arrosto dal forno, lasciatelo riposare per circa 10 minuti, slegatelo, tagliatelo a fette.
  • Diluite il fondo di cottura con alcuni cucchiai di panna, aggiungete il passato di castagne, mescolate con cura, fate scaldare e addensare leggermente.
  • Versatelo in salsiera e servitelo caldo con la carne.
