Notes

Nutritional Aspects of Onion

Onions are composed of 90% water, 1% proteins, very little fats, and some minerals such as potassium, calcium, and phosphorus (Table 1). The carbohydrate portion is mainly made up of simple sugars and a small amount of fiber mainly consisting of fructans (a polymer of fructose) which, from a nutritional standpoint, is important as it is an indigestible polysaccharide serving as a substrate for gut bacteria. This shifts the balance of the gut flora favoring bifidobacteria (to the detriment of putrefactive bacteria), with documented health benefits.

Why is Tropea Onion Red?

Because it is rich in anthocyanins (polyphenolic sulfur compounds belonging to the flavonoid family).

Why does Tropea Onion lose its exceptional physical, chemical, and organoleptic qualities when grown in different areas?

The qualitative characteristics of this variety depend on its genetic makeup and interaction with the environment. Environment refers to: soil characteristics, proximity to the sea, day length, temperature, humidity. Four thousand years of this interaction have resulted in these particular features.
The warm, gentle sea breeze constantly caressing our fields! A genetic heritage brought to our lands by the Phoenician people nearly 4000 years ago! These are the main factors responsible for the extraordinary qualities of this product.
