The frittata is a very quick side dish to prepare. The onion and pumpkin frittata makes an excellent culinary combination. In the VerdeGusto recipe, we chose the Tropea red onion which gives the frittata a sweeter taste. Let’s see how to prepare it.

- Silicone spatula (optional but useful for flipping the frittata delicately)
Ingredients
- 1 nr Onion
- 50 gr Grana Padano
- 8 nr Eggs
- 250 gr Pumpkin
- q.b. Olive Oil extra virgin
- q.b. Salt
Instructions
- Slice the pumpkin and onion thinly.
- Cook the onion and pumpkin with a little water, then add a bit of oil and sauté briefly.
- Crack the eggs into a container. Then, add salt, grated Parmesan, and beat together.
- Mix the drained pumpkin and onions with the eggs.
- Cook in a large (cast iron) pan lightly greased with oil. Be careful when flipping the frittata. Use a large plate cover or a non-cavity container to help. Enjoy your meal!
