Ingredients
Sponge Cake
- 125 gr Flour
- 125 gr Sugar
- 5 nr Eggs
- 1 pinch Salt
- 1 packet Baking Powder
- 1 nr Lemon Grated zest
- 1 teaspoon Saronno Amaretto
For Filling
- 200 gr Chestnuts pitted and boiled
- 1 jar Chestnut Jam
- 1 square Dark Chocolate shaved
- 1 glass Liquid Cream
Glaze
- 3 squares Dark Chocolate
- 100 gr Almonds chopped
Instructions
- Beat the egg yolks with sugar, then fold in the stiffly beaten egg whites, followed by the flour, baking powder, salt, and lemon zest.
- Spread the batter in a buttered and floured cake pan and bake for 20 minutes.
- Remove from oven and invert onto a damp cloth.
- Brush with Saronno Amaretto and immediately roll up into a log.
- Meanwhile, prepare the filling by sieving the chestnuts and incorporating all other ingredients.
- Spread this cream over the sponge cake and roll up.
- For the glaze, prepare melted chocolate and brush the log with it, then roll it in the chopped almonds.

The Chestnut Christmas Yule Log is a generous dessert that pleases all lovers of rich and enveloping flavors. If you want an even softer filling, you can slightly increase the cream or add a spoonful of amaretto liqueur.
The log keeps in the refrigerator for 2–3 days if well wrapped and improves after a few hours of resting.
