Fileja, a long and slightly twisted fresh pasta, is made to hold sauces and “bring them” to the bite. Equipment

  • 1 large pan

Ingredients

  • 400 gr fileja
  • 150 gr ’nduja
  • 200 gr tomato passata
  • 1 nr onion
  • 2 cloves garlic
  • 60 ml oil extra virgin olive oil
  • q.b. salt
  • q.b. black pepper
  • q.b. pasta cooking water 1 ladle, if needed

Instructions

  • Bring water to a boil for the pasta and salt it. Cook the fileja and drain it al dente, reserving a ladle of cooking water.
  • In a large pan, heat the oil and gently soften the chopped onion and garlic over low heat.
  • Add the ’nduja and let it melt, stirring constantly, still on low heat.
  • Add the tomato passata, season with salt and pepper, and cook for 10 minutes. If the sauce dries out too much, add a little pasta cooking water.
  • Pour the fileja into the sauce and toss for 1 minute. Serve hot.

Notess

  • For perfect creaminess, use the cooking water: it helps bind the sauce without additions.
  • If you want a milder spiciness, reduce the ’nduja to 100 g and slightly increase the passata.

How to get a truly creamy sauce

The secret of fileja with ’nduja is not adding ingredients, but managing the consistency well. Always keep a ladle of cooking water aside: added little by little, it transforms the sauce into a cream that coats the pasta without being heavy.
