- qb Salt a pinch
- qb Vinegar a little
Instructions
Prepare the boiled eggs
- Cook the farmer's fresh eggs in a bain-marie.

- As soon as they are hard-boiled, let them cool by removing the boiling water and adding cold water to the pan.
- Remove the eggshell. Cut the eggs in half.
- Separate the egg whites, which will be used as a container for the filling, from the yolks.
Egg filling
- Place the yolk in a bowl. Add a little salt, a little dried mint, a little extra virgin olive oil, and a little vinegar. Mix with a fork, crushing the yolk and blending the other ingredients.
- Fill the eggs with the stuffing mixture.
