The garlic boasts different properties and beneficial effects thanks to selenium. It has a high amount of potassium, enzymes, vitamins A, B1, B2, PP, C, mineral salts, trace elements.
The main element is allicin, a thiosulfinate (contains sulfur) which is a powerful natural bactericide. It has hypotensive and cardiovascular protective action, antiseptic, antibiotic.
It is also hypoglycemic. That is, it improves the conditions of diabetics by curbing blood glucose levels. It helps arteries stay clean and free of plaques thanks to a substance called ajoene and seems to act as a natural blood thinner. It has also been scientifically proven that garlic can cure colds, regulate blood pressure, and control cholesterol.
There are many types of garlic, each requiring a unique growing environment. Hardneck garlic has a firm stem and a strong flavor. It grows well in colder climates and is composed of the Porcelain, Rocambole e Purple Stripe.
Black garlic
The black garlic is a product obtained by naturally fermenting garlic, without adding additives, preservatives, or yeasts. Fresh garlic bulbs are left to ferment in a controlled humidity and temperature environment for 30 days, without additives or preservatives, then left to oxidize for another month and a half. During this process, especially in the second phase, the cloves blacken, become soft (almost chewy), acquire a sweetish flavor, and lose the pungent smell. In this way, it loses the classic taste of traditional garlic and becomes more easily digestible. The origin of black garlic is controversial. For some, it dates back in history, for others, it was born at the start of the new millennium in Korea.

I The benefits of black garlic are similar to those of white garlic. The black garlic has less allicin but a higher concentration of antioxidants, which help prevent aging and protect the heart.
