These oat flour energy bars are simply delicious, packed with fiber, vitamins, and minerals, and they are vegan too. You can add different dried fruits or chocolate chips for a different snack every time.
Make these bars in the evening so you have them for the next two mornings when you can serve them with a good cup of coffee. The best part about these oat flour bars is that the banana and apple mixture holds everything together, so there’s no need to add sugar or butter. If you prefer, you can use only bananas, adding two more and no apples.

Ingredients
- 2 tazze rolled oats
- 1 tazza shredded coconut unsweetened
- 1/3 tazza raisins or chocolate chips, dried fruit
- 2 nr bananas large and ripe
- 2 nr apples peeled and finely grated
- 1 teaspoon vanilla extract
- qb cinnamon or other spices, optional
Instructions
- Preheat the oven to 180°C. Grease the sides and bottom of an 8×8 inch baking dish. Line the dish with parchment paper.
- In a medium bowl, combine the rolled oats, shredded coconut, and raisins.
- In a large bowl, mash the bananas well.
- Add the grated apples and vanilla extract and mix well.
- Add the oat mixture and stir until well combined.
- Place the mixture into the prepared baking dish, press with the back of a spoon, shape some forms on top with a fork (optional), and bake for 30 minutes until the edges start to become crispy.
- Place the baking dish on a wire rack to cool. When sufficiently cool, cut into bars and serve.
