This salad recipe is actually Greek and was likely invented by the ancient Greeks long before we started making them. It was in the first century that the ancient Greeks and Romans began dressing raw vegetables with oil, vinegar, and herbs, adding white cheese for a delicious dish. The white cheese is believed to have been feta. In fact, it is the oldest cheese ever produced, with the earliest evidence dating back 8,000 years.

Frequently Asked Questions
Is Cucumber Salad Healthy?
Yes, cucumbers are rich in vitamins and minerals such as magnesium, potassium, phosphorus, and vitamins B, C, and K. They help control blood sugar and contain antioxidants like triterpenes, lignans, and flavonoids that protect cells. Additionally, these great antioxidants reduce inflammation, relieving arthritis and other painful conditions.
What is the Difference Between Various Types of Cucumbers?
Persian and English cucumbers are basically the same: crunchy cucumbers with thin skin and a slightly sweet flavor. These long, thin cucumbers have small seeds and don’t need peeling. Mini cucumbers aren’t just regular cucumbers picked early but a different variety similar to Persian or English cucumbers that stay small regardless of ripeness.
What Other Types of Cheese Can I Use?
Many cheeses can substitute well for feta. Brie is the most commonly used soft white cheese, with a buttery and mild flavor. Mascarpone is another soft cheese similar to cream cheese, originating from Italy. You can also use camembert, boursin, ricotta, or chèvre.
What Are the Different Types of Vinegar?
There are more than a dozen types of vinegar, but the most common are distilled white, apple cider, rice, red wine, white wine, and balsamic. All vinegars are made from a liquid containing fermented yeast and sugars to produce ethanol. The flavor and type depend on the liquid used to produce the vinegar.
