Notes

Preparation: 50 minutes.

This winter vegetable soup is an extremely versatile preparation, suitable for small variations without losing its identity. It can be made richer by adding diced potatoes, legumes like cannellini beans or chickpeas, or a handful of rice or small pasta to turn it into a complete main dish.

For a lighter version, you can eliminate the pancetta and rely entirely on the aroma of the vegetables and a good extra virgin olive oil added raw. Served with toasted bread croutons or a slice of rustic bread, it becomes a perfect comfort food for winter dinners.

Like all soups, it is even better the next day when the flavors have had time to meld. Store it in the fridge for one or two days and reheat gently before serving.

Why this dish is healthy

Winter vegetable soup is a dish rich in nutrients and vitamins, perfect for warming up during cold winter days. The main ingredients, such as Savoy cabbage and pancetta, provide a good supply of fiber and protein, contributing to a balanced diet. Furthermore, the combination of fresh vegetables aids digestion and strengthens the immune system, making it ideal for dealing with seasonal changes. The warmth of the soup is, ultimately, a hug for body and mind, perfect for moments of conviviality and relaxation.

Tips for making the recipe

For an even tastier touch, I recommend adding spices like rosemary or thyme during cooking. These aromatic herbs not only enrich the flavor of the soup but also bring antioxidant benefits. If you want a heartier dish, you can add legumes such as beans or lentils. Remember to savor the soup over low heat, allowing all the flavors to blend well. Serve hot, maybe with a sprinkle of grated Parmesan cheese for an even tastier result.

Do children like this recipe too?

This soup is a great way to get children to eat vegetables in a tasty and appealing way. The delicate flavor of pancetta and the soft texture of the vegetables make it easily palatable even for the little ones. To make the dish even more fun, you can involve them in preparation, letting them help mix the ingredients or serve the soup. Also, serving the soup with bread croutons makes the meal more interactive and stimulating for children.

Pairings

Winter vegetable soup pairs well with various accompaniments. A good red wine, such as a young Chianti, enhances the flavors of its ingredients. If you prefer a non-alcoholic option, a fresh tomato juice with basil is perfect to accompany the dish. Additionally, you can serve the soup with rustic bread croutons or a warm baguette, adding a pleasant crunch to the meal. For a fresh touch, a simple green salad with vinaigrette can be an excellent side dish.

Storage tips

The soup can be stored in the refrigerator for 2-3 days, making it a practical choice for weekly meals. Make sure to keep it in an airtight container to preserve its freshness and flavor. If you want to store it longer, you can freeze it in portions, so you always have a delicious soup ready to use. When you decide to eat it, just warm it slowly in a pot, adding a drizzle of olive oil to revive its taste.
