Cucumber and Blueberry Salad with Peaches and Goat Cheese
This salad is very easy to prepare! You only need a few cuts and a bowl!
Ingredients
Method
- Wash and dry all ingredients.

- Finely chop the cucumbers, peaches, jalapeño, red onion, and julienne the basil leaves.
- Place all the fruit and vegetables into a bowl.
- Add crumbled goat cheese, the juice of one lime, and warm honey.
- Finish with sea salt and enjoy!

Notes
This salad can be seasoned and stored in an airtight container for 3 days. Keep in mind that cucumbers release some water, so we recommend mixing the salad again before serving.
You might also want to keep the goat cheese separate because of its high water content in this salad. As it sits, the cheese could become soft.
This is a great side salad to serve at a summer barbecue. I served mine with a grilled grilled chicken, but salmon, burgers or even crispy tofu would also go well with this fresh summer peach salad.
