Ingredients

  • 500 gr. Fagiolini
  • 1 nr Cipolla Grande
  • q.b. Olio D'oliva
  • q.b. Aceto Aromatico
  • q.b. Sale
  • q.b. Pepe
  • 3 nr Uova Sode

Instructions

  • Lessa i fagiolini in acqua salata per 10–12 minuti (devono restare verdi e teneri). Scolali e raffreddali subito sotto acqua fredda (o in una ciotola con acqua e ghiaccio), poi asciugali bene.
  • Prepara le uova sode: mettile in acqua fredda, porta a bollore e cuoci 9–10 minuti. Raffreddale, sgusciale e tienile da parte.
  • Affetta la cipolla molto sottile. Se è intensa, lasciala 10–15 minuti in acqua fredda (facoltativo), poi scolala e asciugala.
  • In una ciotola unisci fagiolini e cipolla. Condisci con olio, aceto, sale e pepe. Mescola con delicatezza.
  • Effetto “mimosa”: separa albumi e tuorli. Tritura finemente gli albumi e sbriciola i tuorli sopra (anche con una grattugia a fori larghi). Completa e servi.

Tips and Variations

  • For a rounder taste, use sweet red onion or spring onion.
  • If preparing in advance, add the egg “mimosa” just before serving to keep it drier and more attractive.
  • Want a richer version? Add some flakes of Parmigiano or toasted almond slivers.

Storage

Keeps refrigerated in a closed container for 24 hours. It’s best to add the eggs at serving time if possible.
