A definitely summery but tasty dish from the Sardinian culinary tradition: Sardinian gnocchetti with cold sauce. This is a first course with multiple ingredients, but the recipe is of medium difficulty. Among the ingredients, there is fish, with salted anchovies and tuna. The recipe can also be considered as a single dish.

- Grater (for pecorino or other cheese)
Ingredients
- 320 gr Pasta sardi gnocchetti
- 200 gr Tuna in oil
- 2 nr Anchovies salted
- 2 nr Eggs
- 7 tbsp Olive Oil
- 1 nr Lemon
- as needed Parsley
- 8 leaves Basil
- 1 clove Garlic
- as needed Worcestershire Sauce
- 1 nr Tomato
- as needed Salt
Instructions
- Bring a large pot of salted water to a boil. Add the sardi gnocchetti.
- Drain the gnocchetti, catching the water, and let them cool down.
- In the same boiling water, cook the eggs for about 9 minutes. Then rinse under cold water and peel them.
- Clean the parsley and basil, then wash them.
- Put a piece of lemon zest, parsley, basil, chopped hard-boiled eggs, garlic, lemon juice, a splash of Worcestershire, and oil into a blender. Blend until you get a smooth sauce.
- Drain the tuna and shred it.
- Desalinate the anchovies, wash them, and shred them.
- Arrange the cold gnocchetti on a serving plate, dress with the sauce, tuna, and anchovies, decorating with tomato wedges. Serve.
