A recipe that rightfully belongs to the tradition of Venetian cuisine. “Risi e bisi” is a first course for lovers of earth’s products: rice and peas. The preparation of the recipe can vary between butter (Northern Italy tradition) and olive oil.

Ingredients
- 240 gr Rice
- 1 kg Peas fresh
- 50 gr Raw ham one slice
- tbsp Olive oil
- q.b. Butter
- 1 pcs Onion
- 1 tsp Mint leaves
- 1, 2 liters Vegetable broth
- q.b. Salt
- q.b. Pepper
Instructions
- Bring the vegetable broth to a boil.
- Meanwhile, shell the peas.
- Peel the onion and slice it.
- In a pan, heat a tablespoon of oil, and sauté the onion and diced ham.
- Add the peas, then add the rice.
- Cook by gradually pouring in the broth, as for a very creamy risotto.
- Season with salt (pepper to taste) and add the mint 5 minutes before cooking finishes.
- Add the remaining oil and stir in a little butter (optional).
- Mix and serve at the table.

Notes
If you prefer a drier dish, add less broth.
