Piedmont bonet is one of those desserts that tell a story of patience and balance in cooking. Born as a dessert for special occasions, it was mainly prepared during holidays when cooking time was an integral part of the convivial ritual.
Cocoa, amaretti, and caramel come together in a compact and velvety texture, far from modern creams but deeply tied to tradition. The aroma of rum and the slightly bitter note of cocoa make bonet a mature, elegant dessert, never overly sweet. Served strictly cold, it is the classic Piedmontese way to end a meal with balance and character.

Equipment
- 1 small saucepan (for the caramel)
- 1 pudding mold
- 1 large bowl
- 1 whisk
- 1 bain-marie pot
Ingredients
- 500 ml milk
- 4 nr eggs
- 150 gr sugar
- 100 gr amaretti cookies
- 50 gr unsweetened cocoa powder
- 50 ml rum
- 50 gr sugar for the caramel
Instructions
- Prepare the caramel by melting the sugar in a small saucepan until it turns amber in color.
- Pour the caramel into the pudding mold, spreading it evenly on the bottom.
- In a bowl, beat the eggs with the sugar.
- Add the cocoa, crumbled amaretti cookies, rum, and milk, mixing until you get a homogeneous mixture.
- Pour the mixture into the mold.
- Cook in a bain-marie by placing the mold in a pot with hot water, cooking for 40–50 minutes over medium-low heat.
- Let cool completely before unmolding.
- Serve the bonet well chilled.
