Ingredients

  • 500 gr Potatoes
  • 4 nr Eggs
  • 1 bustina Yeast Powder or a cube
  • 100 gr Sugar
  • 1 nr Lemon grate the zest
  • 1000 gr Type 0 Flour
  • qb Olive Oil

Instructions

  • Boil the potatoes and peel them.
  • Pass the potatoes through a potato ricer.
  • Mix the whole eggs, cooked potatoes, flour, yeast, a tablespoon of sugar, and grated lemon peel until you get a homogeneous mixture.
  • Form small rings and place them on a surface to rise. Cover with a cloth.
  • Once risen, fry the zeppole in hot oil.
  • Remove the zeppole from the oil as soon as they are golden and place them on absorbent paper.
  • Immediately after, pass them in sugar.
