The “potato zeppole” resemble, although with some differences, the “St. Joseph’s zeppole.” The potato zeppole recipe we propose is very simple. Just follow the steps and serve the “zeppole hot.” Here’s how we prepare them.

Ingredients
- 500 gr Potatoes
- 4 nr Eggs
- 1 bustina Yeast Powder or a cube
- 100 gr Sugar
- 1 nr Lemon grate the zest
- 1000 gr Type 0 Flour
- qb Olive Oil
Instructions
- Boil the potatoes and peel them.
- Pass the potatoes through a potato ricer.
- Mix the whole eggs, cooked potatoes, flour, yeast, a tablespoon of sugar, and grated lemon peel until you get a homogeneous mixture.
- Form small rings and place them on a surface to rise. Cover with a cloth.
- Once risen, fry the zeppole in hot oil.
- Remove the zeppole from the oil as soon as they are golden and place them on absorbent paper.
- Immediately after, pass them in sugar.

- Serve the zeppole still warm.
