The tomato and mozzarella caprese is a side dish but also an appetizer or first course, depending on the occasion. The caprese with Campania DOC buffalo mozzarella is a very popular and requested dish throughout Italy.

Ingredients
- 500 gr. Buffalo mozzarella
- 4 nr. Tomatoes
- q.b. Basil
- q.b. Olive oil extra virgin
- q.b. Salt
Instructions
- Wash and peel the tomatoes, cut them into slices, and remove the seeds.
- Slice the mozzarella to a few millimeters thick and arrange the ingredients alternately in concentric circles on a serving plate.

- Sprinkle with fresh basil leaves and drizzle with olive oil and salt. Keep cool.

DOP Buffalo Mozzarella
For DOP buffalo mozzarella, only fresh whole buffalo milk from certified farms in the area is used. With the Protected Designation of Origin, characteristic organoleptic and trade qualities of the traditional mozzarella di bufala campana are recognized, deriving from specific environmental conditions and traditional processing methods exclusive to this production area. Only dairies that pass a demanding certification process can obtain the DOP mark. These companies are then continuously monitored through analyses to ensure compliance with the standards and high quality of the product on the market.How to identify certified buffalo mozzarella
All buffalo mozzarella sold with packaging bearing the words “Mozzarella di Bufala”, “buffalo mozzarella”, etc., are NOT certified DOP and are non-legally authorized terms.
Each package must display the following information:
• Markings of the Protection Consortium;
• DOP labels;
• Name: Mozzarella di Bufala Campana;
• Legal references (D.P.C.M. 10/5/93) and community (Reg. CE n.1107/96);
• Dairy authorization number (AUT. CONSORZIO TUTELA N. 000/00/0000).

The cheese DOP Mozzarella di Bufala Campana must be sold pre-packaged at the source (sealed bags, trays, cups, etc.) as required by law (D.l.vo 109/92, art. 23).
If the packaging is a tied bag, a guarantee seal placed by the producer must be present above the knot. Mozzarella in unsealed packages can be easily replaced with non-DOP mozzarella.
