A rustic dish from Apulian cuisine, also popular throughout much of southern Italy: peppers with eggs. It is a quick and tasty main or side dish.

- Bowl (optional, for beating the eggs)
Ingredients
- 400 gr peppers
- 4 nr eggs
- 250 gr cherry tomatoes
- 4 cucchiai Olive oil
- qb salt
Instructions
- Wash and prepare the peppers by removing the stems and seeds.
- Cut them into strips.
- Wash the cherry tomatoes.
- Pour oil into a non-stick pan and sauté the peppers for about 7 minutes, stirring frequently.
- Add the cherry tomatoes, salt, and reduce the heat to cook everything for about 4 minutes.
- Beat the eggs in a bowl with a pinch of salt.
- When the vegetables are tender, add the eggs.
- Mix and cook for a few more minutes. Then serve at the table.
