Ingredients

  • 400 gr peppers
  • 4 nr eggs
  • 250 gr cherry tomatoes
  • 4 cucchiai Olive oil
  • qb salt

Instructions

  • Wash and prepare the peppers by removing the stems and seeds.
  • Cut them into strips.
  • Wash the cherry tomatoes.
  • Pour oil into a non-stick pan and sauté the peppers for about 7 minutes, stirring frequently.
  • Add the cherry tomatoes, salt, and reduce the heat to cook everything for about 4 minutes.
  • Beat the eggs in a bowl with a pinch of salt.
  • When the vegetables are tender, add the eggs.
  • Mix and cook for a few more minutes. Then serve at the table.
