  • Large bowl or container with lid (for marinating)
  • Sharp knife
  • Cutting board
  • Large saucepan with lid
  • Wooden spoon
  • Small saucepan (optional for sauce reduction)
  • Colander (to filter the bottom)

Ingredients

  • 1 no. rabbit in pieces weighing approximately 1.2 kg
  • 3 table spoon Oil extra virgin
  • 120 grams tuna drained
  • 2 fillets anchovies in oil
  • 2 wedges Garlic without a shirt
  • 2 fillets Peppers bittersweet yellow
  • 2 no. peppers red
  • 1 spoonful of capers rinsed from salt
  • handful Parsley
  • 100 grams Olive keep Ascoli
  • Chili as you like

Instructions

  • Cook the rabbit in pieces.
  • We put it in a large saucepan with the oil and 2 crushed garlic cloves.
  • After about 10 minutes of cooking, pour a glass of white wine such as "Falerio" and let it evaporate.
  • Add salt and chilli pepper and continue cooking with the pan covered very slowly until evenly browned.
  • Chop the tuna, anchovies, garlic, capers, parsley, olives and peppers on the cutting board.
  • Pour and heat the mixture in a little olive oil and add it to the cooked rabbit, cooking for about 5 minutes on a high heat.
