South Tyrolean cuisine always offers some special dishes. The recipe for “moslini gnocchetti” is really very simple to prepare. Only a few steps are needed to get a tasty dish. The ingredients are few with spinach reigning supreme, certainly a key vegetable ingredient. And then flour and eggs.

Ingredients
- 500 gr Type 0 Flour sifted
- 4 nr Eggs
- 300 gr Spinach cooked, squeezed, and finely chopped
- 40 gr Butter
- qb Milk
- 3 cucchiai Grana Padano grated
- qb Salt
Instructions
- Beat the eggs in a bowl, add a pinch of salt and the flour gradually.
- Add the milk and mix until smooth.
- Let it rest for about 30 minutes.
- Then divide it into two parts. Add the spinach to one part.
- Bring a large pot of water to a boil with some salt.
- Add the two mixtures by teaspoonfuls.
- When the gnocchi surface, push them to the bottom with a slotted spoon and cook through.
- Drain them, place in a bowl. Season with pieces of butter and salt. Serve hot.
