Ingredients

  • 2 no peppers fleshy
  • 4 no tomatoes firm and mature
  • 1 no Cucumber
  • 1 no Fennel
  • 1 no Spring onion
  • 1 rib Celery
  • 1 clove Garlic small
  • 3 spoons Apple cider vinegar or white wine
  • 4 spoons Olive Oil Extra virgin
  • 1 tip Chili at will
  • 10 wires Chives
  • to taste Salt
  • to taste pepper

instructions

  • Blanch the tomatoes in a saucepan with water. Peel them, remove the seeds and blend the pulp with the oil until a homogene sauce is obtained.
  • Take the diced fennel after removing the external leaves. Wash it.
  • Private the celery from the filaments and wash it.
  • Sbucciate l'aglio e il cipollotto e tritatelo tutto insieme.
  • Tagliate il cetriolo a dadini piccoli dopo averlo sbucciato.
  • Lavate i peperoni, private dei semi e tagliateli a dadini.
  • In una ciotola unite l'aceto al pepe, sale e al peperoncino.
  • Versate i pomodori frullati in una zuppiera. Aggiungete tutte le verdure preparate. Salate, pepate e aggiungete l'aceto. Mescolate.
  • Mettete la zuppa in frigo per circa 2 ore.
  • Prima di servirla a tavola tiratela fuori dal frigo e lasciatela risposare per circa 30 minuti.
  • Servitela aggiungete l'erba cipollina.
